Both crafted in the Italian tradition, yet wholly American and made using milk from locally sourced family farms. If you’ve ever been inclined toward hugging a dairy cow, these two Pieology cheese selections could push you over the edge.

Ah, Parmesan…aged for months to complex, salty, buttery, nutty perfection. And then there’s Gorgonzola… aged for 90 days, bright and tangy, soft yet crumbly, textured yet creamy.

We also offer whole milk, low moisture Mozzarella, award winning silky smooth Ricotta, old world Greek Feta crafted in Wisconsin from rBST free cow’s milk and finally, at select locations, Daiya Vegan cheese which isn’t really a cheese, but tastes and acts like it, which is really all that matters.

Our cheeses arrive fresh in wheels and blocks. That means we prep them for your pizza by grating, shaving, crumbling and scooping them by hand.

That takes a little longer but it also tastes way better.
